Because the possible problem i would see is getting into the area of fraudulent buyers using invalid/fake forms of those payments. One's you can't distinguish without the bank actually processing the payment.
USPS is the only one that is instant confirmation since you collect directly from the PO in cash.

Immediately after I receive payment. I deposit checks and money orders only once or twice a week. I've never received a fake money order or cashier's check and never received a personal check that bounced. I normally don't accept checks though and only receive a handful per year from buyers who just can't read.
If it's a personal check over $30 or 40 then I make them wait about 5-7 business days after I deposited the check.
